Named after the Seychelles island where Paul’s parents met, Mahé is built on an ethos of ‘beginnings’ through its family ties to the island, as well the fundamentals of cookery, all whilst showcasing the very best of Cornish produce.  The interiors – featuring one-of-a-kind antiques and bespoke furnishings carefully selected by Emma Ainsworth and designer Eve Cullen-Cornes – create an immersive, indulgent oasis in the heart of Padstow.


Adjoining Paul Ainsworth at No.6, Mahé is our development kitchen. Here the team explore new combinations of flavour and technique to create innovative dishes from the very best seasonal ingredients.

Mahé is the nerve centre not only for Paul Ainsworth at No6, but also the whole Ainsworth Collection. They are so excited to share this space with our guests on the chef’s table and to invite them along for the journey, for a glimpse into the magic behind the scenes.

Development Chef Josh Green, is instrumental in the development of both the Mahè dining experience and seasonal collections at Paul Ainsworth at Number 6. A fountain of knowledge Josh has travelled extensively having spent a considerable period of time in South East Asia, this has helped shape the terrific cook he is today. A Casamia alumni having spent 10 years with the Sanchez-Iglesias family Josh was heavily involved in the expansion of the group and assisted with new openings Paco Tapas, Pi shop and Decimo. Now settled in Cornwall Josh heads up the Development Kitchen and Mahè chefs table with his infectious enthusiasm for all things gastronomy,  creating dishes which showcase and celebrate the amazing bounty of ingredients that Cornwall has to offer.

Mahé chef’s table offers guests the opportunity to see Josh’s craftsmanship and phenomenal flair for contemporary cookery in action and gain a deeper understanding of the culinary progression behind every dish.

Working in partnership with Josh in our development kitchen and on Mahè chef’s table Rosie Nevill has a keen eye for detail and has quickly established herself as one of the rising stars within The Ainsworth collection, possessing skills way beyond her years. Cornish born and bred, Rosie studied under the Michael Caines Academy and won student of the year 2018, 2019 and 2020 as well as the South West Student Apprentice of the year in 2019 and the Vocational Excellence award in 2021. Now an established member of the Mahè team our guests can enjoy getting to know her and watching the master over charcoal at work!


The Chef’s Table is an exclusive opportunity to gain insight into the creative process of dish development, with the chance to sample new dishes before they reach the menu at Paul Ainsworth at No6.

Sitting just centimetres away from our development kitchen, guests can watch our team prepare a tasting menu for up to 10 diners of modern British gastronomy, crafted from meticulously sourced, seasonal Cornish produce.

The chef’s table is a unique and completely personal experience – you can choose to interact with our chef’s through every step of the cooking process, or slip out onto our private terrace with a cocktail between courses.

Our sommeliers at Paul Ainsworth at No6, personally select the wines in our Padstow cellar, and have created two exclusive wine flights to enhance our dishes. A celebratory glass of fizz is included with your tasting menu, to help you start your evening in style, and our sommeliers are on hand to guide you through our wine list and help you choose something special to take your evening with us to the next level.

The chef’s table is available to book for lunch and dinner from Wednesday to Saturday.

The tasting menu costs from £155pp and changes with the seasons to celebrate the stunning produce grown, made, caught and farmed just miles away.
